Ryuk loves apples because it is an addiction and all Shinigami love apples. He finds Raito's desire for a "Eden" interesting and decides to stay in the human world to enjoy himself and see how things will turn out.It appears he is constantly bugging Raito to accept his offer of Shinigami eyes, which allow humans to see how long other humans have to live and their real names! This makes things much easier because the DEATHNOTE needs a real name and image to kill.
Raito refuses because it will cost him half his life and he wants to rule as god longer.Every Death God has only one DEATHNOTE but Ryuk tricked the King of the Death Gods and got TWO, he gave one to Raito(Light) for fun.
